Home from CSA pick-up

During CSA season I make the same thing almost every Tuesday night. Tuesday is pick-up day for the CSA in the late afternoon. This causes dinner preparation time to get interrupted and crazy. We get salad fixings almost every week, so Tuesday tends to be grilled chicken, salad, and some crunchy, crusty bread. This menu works great because you can’t wait to get your hands on some of those veggies and you throw them in the salad, the chicken can be made ahead of time, and dinner is done quickly while the kitchen remains in chaos as you wash, spin, and store all that veggie goodness for the week.

Tuesday Menu: Grilled Chicken, Salad, and Crusty Bread
Farm Share Produce: snips of Basil and Parsley, a little of the Head Lettuce, and a little of the Salad Mix

I read a tip in a magazine recently about salad and fresh herbs. They suggested chopping up a small bit and throwing them in your summer garden salads. I thought it was a great suggestion because I always have herbs in the fridge from the CSA and they are growing in the garden too. I put it to good use in last night’s salad.
